Fermentation is
the process of culturing microorganisms to produce biomass (boosting) or
promoting microorganisms to produce metabolic products (biochemical compounds),
such as converting sugars into products such as: , gas or alcohol ... of yeast
or bacteria, or in the case of lactic acid fermentation in muscle cells in
oxygen-deficient conditions.
Fermentation
is also more widely used in the growth of microbial biomass in the growth
medium, the accumulation of metabolites useful to humans during microbial
culture. French biologist Louis Pásteur is remembered as one who understands
the fermentation and the cause of its microorganisms.
The science of fermentation is known as "zymology"
